A website that is easy to use. Google checks whether your site loads quickly, whether it works on a phone, and whether people stay on it or leave straight away. A slow, clunky website gets pushed down the rankings.
Your website's reputation. Google trusts websites that other websites link to, a bit like how you trust a restaurant more if lots of people have recommended it. Getting other websites to link to yours is called link building, and it is one of the most important parts of SEO.
Get all three right and Google starts pushing your website higher in the results. The higher you go, the more people find you.

Because most people never look past the first page of Google.
If a potential customer searches for what you do and you are not on page one, they will never find you. They will find your competitor instead.
